    Exclamation OSX will not install

I was given a mid 2011 Imac 21,5 inch screen.
The hdd was stuffed so I replaced it with a 500 gig ssd and install the thermal sensor I got from a place in Sydney (great service)
    I upgraded the 4 gig ram to 24 gig (2*8 gig & 2*4 gig)
I have been trying to install OSX. I have tried each version from the earliest to High Sierra. These have been from genuine disks which I borrowed.
The Imac does not recognise any of the dvd version.
I have used Option (⌥) to tell it to boot from the dvd or the usb and it totally ignores it. Does not show as an option to boot from.
I have also downloaded High Sierra and used Transmac to make a bootable usb with it.
The usb a gpt and is formatted for OSX.
Still no luck with recognising the usb or booting from it.

I have installed Linux Mint 19.3 just to be able to use it in the meantime. It works fine.
The last tome I used a Macbook was in 2014

Would anyone have any idea as to what is wrong in what I am doing, or have done wrong?
    Thanks in advance
    Patrick
